A wine that avoids the 'grassiness' of some of the simpler Burgundian Chardonnays or the richness of the more complex ones. The Aligoté is the regions humbler white grape yet it is clean, simple, fresh and fairly zippy. This is most notable in the production from the area around Chablis - and this is indeed the source for this example. It is ideal for the compensating mellifluous sweetness of blackcurrant cassis liqueur to make a Kir.
